In recent years, la Ruta de los Cenotes has gained traction as an ecotourism destination in the Puerto Morelos Municipality.

A 22-mile strip in the jungle, extending from the Federal Highway to Leona Vicario and going through the town of Central Vallarta which emerged from a chiclero* settlement. It is therefore an area steeped in history. Currently, this route has multiple cenotes, hotels in the middle of the jungle, adventure options and developments committed to the environment.

*chiclero: gatherer of chicle. Chicle is a gum from the latex of the sapodilla tree.

On June 18th, we celebrate the Day of Sustainable Gastronomy. This celebration raises the following questions: What is sustainable gastronomy? Why is it important enough to dedicate an international day to it? and Why should I care?

Sustainable gastronomy refers to the “system that provides healthy ingredients to meet dietary needs while maintaining the ecosystems in balance”. Such system allows to cover the food needs of current generations without compromising the ability to meet the needs of future generations.
